• 30 oz peach halves
• ¼ cup butter
• ¼ cup honey
• 1 tsp grated lemon rind
• ⅓ cup bourbon (make sure it is fairly new for flame to produce)
• ¼ tsp nutmeg
• ½ cup walnuts, chopped
• Vanilla ice cream

Melt butter in chafing dish over high heat; stir in honey and lemon rind. Add peaches and heat, basting frequently. Sprinkle fruit with bourbon and nutmeg, heat and ignite by holding a match to liquid in dish.

Spoon flaming liquid over peaches until flame burns out.

Serve immediately with ice cream and chopped walnuts.
